Happy happy Friday!! I leave for NYC in 2 days (!!!!!!). I cannot wait. A couple of weeks ago, for our Friendsgiving dinner, I made this delicious concoction. I’m a firm believer in chocolate. So adding chocolate to pecan pie makes it even more DElish. This pie is super rich and must be topped with ice cream or paired with a large glass of milk (we had ice cream at our Friendsgiving).

Recipe for Chocolate Whiskey Pecan Pie

What you need:

  • 1 cup semisweet chocolate chips
  • 1 1/2 cups roughly chopped pecans
  • 1 cup corn syrup {light or dark}
  • 1 cup packed brown sugar
  • 4 large eggs, slightly beaten
  • 2 tsp vanilla extract
  • 1/4 tsp salt
  • 1/4 cup whiskey
  • 2 tbsp unsalted butter, melted
  • 1 refrigerated pie crust, thawed

What to do:

  1. Preheat your oven to 325 degrees. Spray a 9″ pie tin with nonstick spray. Place your pie crust in the tin. If it hands over the side, crimp the edges of the dough with your fingers then remove extra dough hanging over the side. Prick the bottom of the dough all over with a fork.
  2. Pour the pecans and chocolate chips in the bottom of the pie crust and set aside.
  3. In a small pot over medium heat, combine the corn syrup, brown sugar and whiskey. Bring to a boil, stir well, then remove from the heat and let cool slightly.
  4. In a bowl, mix together the eggs, melted butter, vanilla and salt. Slowly drizzle hot syrup into the eggs, stirring continuously with a whisk while you drizzle. Pour SLOWLY as to not cook the eggs. Continue drizzling and whisking until the last of the syrup has been poured into the eggs. Pour this over the pecans and chocolate in the pie.Place pie in the oven and bake for 1 hour. Top should be puffy and crust should be golden. Let cool for 1 hour before serving. Top with ice cream!
